Salmon recipes. Norwegian salmon soup. Ingredients for the dish: 370 g Norwegian salmon, 100 g leek, 100 g carrots and potatoes, 50 g tomatoes, lemon and dill.
Cooking:

Cut Norwegian salmon on fillet. Cook soup from head, skin and bones. Finely chop carrots and fry in a little vegetable oil (its color should not change). Cut leek into rings and fry lightly with tomatoes. Cut potatoes into slices and stew until half ready. After boiling filter broth, then add slices of salmon and vegetables. Cook soup at low boil until ready. Before serving garnish a salmon dish with a circle of peeled lemon and dill.

Carpaccio of Norwegian salmon with pepper and tomato salad

Ingredients for the dish: 500 g Norwegian salmon fillet, 1 tablespoon truffle oil, 2 tablespoons colored pepper, grated parmesan cheese (for decoration).

For salmon recipes marinade: half a cup of olive oil, 1 glass brandy, juice of one lemon, salt and sugar.

For salad: 4 tomatos, half a cup of olive oil, 1 bunch fresh basil, pulp of 1 lemon, 2 tbsp crushed dried tomatoes, cayenne pepper, salt

Cooking:

Leave Norwegian salmon fillet in marinade for 6 hours. Then lay it on aluminum foil, sprinkle with chopped colored pepper and place in freezer. When salmon freezes, cut it in thin slices, add truffle oil, lemon juice and parmesan cheese. Serve a finished salmon dish with salad and toasts or fresh French baguette.

Norwegian salmon rolls with spinach

Ingredients for the dish: 400-500 g Norwegian salmon fillet, 200 grams Norwegian salmon mousse, 12-16 medium-sized spinach leaves.

For mousse: 100 g Norwegian salmon fillet, 1 egg, 50 g 30% cream.

Cooking:

Scald spinach and put on ice. Cut salmon into thin slices, lay on a sheet of cling film (15х20 cm) and cover with spinach leaves.

To prepare mousse, you should whip salmon fillet, cream, egg until the paste-like mass. Spread the resulting mousse on spinach.
Make rolls, tightly fasten edges of the film and stew on a very low boiling. Then put rolls on a tray to cool, cut.

Before serving, decorate salmon recipes dish with lettuce, greens, vegetables and lemon.
