Summer and autum is berry time. Fresh berries are tasty, aromatic, have beneficial effects on our bodies. They step up the digestion, accelerate metabolism, improve heart’s activity, prevent development of many diseases.

Berries contain vital substances: lipids, organic acids, easily assimilated sugars, vitamins, trace elements. Therefore, throughout the summer you should eat a wide variety of fresh berries. And of course, prepare various dishes of berries: compotes, pies, berry soups. And for holidays - delicate, fragrant, beautiful berry cakes!

Homemade cake recipes are varied. Let’s start with this, which will require any berries.

Berry cake

Ingredients: 150 ml mayonnaise, 3 eggs, 2 cups sugar, 100 g sour cream, teaspoon butter, half teaspoon soda, cup of flour.

Cooking. Separate yolks from whites and pound with a glass of sugar, add mayonnaise, sour cream, flour, soda, mix everything. Butter the pan, sprinkle with flour, put dough in it. Bake cake in an oven with medium heat to golden brown color. Put fruits on finished cake on top. Pour everything with eggs whipped with a glass of sugar (whites should be cooled) and bake on low heat.

Strawberry is very popular, one of the first summer fruits. You can use it for cooking the most delicious cakes, combining it with cottage cheese, then with cheese. But more often they prepare biscuit cake, decorated with large berries with stems.

Strawberry cake

For biscuit: 8 eggs, cup of sugar and 1.25 cups flour, for cream - 250 g butter and a glass of sugar, for berry sauce - 700 g strawberries.

Cooking. First separate egg yolks from whites. Pound egg yolks and sugar, add flour, stir thoroughly. Then put gently whipped whites. Pour dough into a mould, greased with oil and sprinkled with crushed crackers. Bake during 30-35 minutes at a temperature of 220-230 degrees.

Leave a part of fresh berries with stems for decoration. Wash remaining strawberries and prepare puree. Cut biscuit into layers. Put puree of berries on each layer, then smear with cream. Prepare cream from butter, pounding it with sugar. The top of cake is decorated with strawberries.

Black currant is one of the most useful berries, good for homemade cake recipes. Bake a cake with black currant jelly, this dish will not leave anyone indifferent.

Black currant cake

Ingredients: 200 g flour, 100 g butter, 75 g powdered sugar, 1 egg; jelly - 8 g gelatin, 125 g black currant juice, 2 tablespoons sugar, 5 table spoons of white wine, 40 g black currant liquor, 125 g black and red currants.

Cooking. Knead dough from flour, butter, sugar powder and egg and put in the cold. After 2 hours roll it out, spread in the mould, put in a heated oven and bake at 180 degrees for about 20 minutes. Soak gelatine in water. Warm black currant juice and dissolve gelatin in it. Mix sugar, wine and liquor well, add to the mixture. Put washed berries on top and cover with jelly.

Late summer is the time for buckthorn. You can cook a simple and delicious cake from it.

Buckthorn cake

Ingredients: a glass of kefir, 1 teaspoon soda, a glass of sea-buckthorn, 2 eggs, 2 cups flour, 1 cup sugar for the dough, and 2 cups sour cream, 1 cup sugar for cream.

Cooking. Mix kefir with buckthorn and soda. After 5 minutes, add eggs, flour and sugar. Divide the dough into 2 parts and bake at a temperature of 200 degrees for 30-40 minutes. Cook cream, stirring sour cream and sugar. After cooling connect cakes, smearing them with cream.
